Spicy Meatless Chicken Grilled Cheese

This may look unhealthy at first sight. But compared to the various options out on the fast food market, this simple sandwich is great alternative to a fat-laden Monday night binge. Oh and best of all? It's vegetarian! (No chickens were harmed in the making of this recipe.) Of course, it's best to move away from processed foods all together and add some greens...but one step at a time.

Ingredients

Serving size: 1 | Calories: 428 | Fat: 19g | Protein: 18g | Carbs: 41g | Fiber: 4g | Sugar: 6g | Sodium: 997mg

1 slice of Oroweat Whole Grains Oatnut Bread (or choice of bread)
1 Boca Spicy Meatless Chicken Patty 
1 Veggie Cheddar Flavour Cheese Slice
1 tbsp of Original Vegenaise Dressing
1 tsp of garlic powder
1 tsp of basil flakes
1 tsp of oregano flakes

Preheat oven to 350°. Spread Vegenaise evenly on bread. Add cheese and patty. Sprinkle herbs. Place in oven for 5 to 8 minutes or bake until cheese is melted.

Steamed Butternut Squash Chicken with Garlic & Parsley



A delicious side dish that gives you sweetness with a poultry kick!

Ingredients
  •  2 cups of shredded store bought rotisserie chicken
  • 1 bag of Marketside Butternut Squash Steamed (4 cups)
  • 2 tablespoons extra-virgin olive oil, divided
  • 1 tablespoon of all-purpose seasoning
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground pepper, divided
  • 2 cloves of garlic, minced
  • 2 tablespoons Italian parsley seasoning
1. Microwave the Butternut Squash for 5 minutes.
2. After steaming, toss squash with olive oil, garlic, and all seasonings in a bowl.
3. Add 1 tablespoon of olive oil to pan and place on medium heat. Add chicken and stir until slightly browned. 
4. Add the butternut squash mix to the chicken and stir until even.

Taste and serve.

Tip: For an even better taste, add corn!

Rockstar Energy Drinks

I had a Rockstar Zero Carb energy drink for the first time on Saturday. The effects of it lasted all the way through Monday. I was still able to sleep at night, but during the day I was wide awake. My gym trainer (who recommended the product) was amazed at my steady energy throughout the entire workout. I did 1.5mi on treadmill, 90 sit ups, 60 jumping jacks, weight training, and more jumping. Today, I am going to put Rockstar to the test and drink it before my workout again. Oh and the best part!...It tastes like sour grape jolly ranchers. YUM

Creamy Vanilla Pudding - It's Fat-Free!

Try this delicious recipe with fresh fruit!

Fat Free Creamy Pudding Sauce
From Krafts Foods

Prep Time: 5 min
Total Time: 5 min
Makes: 24 (2-Tbsp.) servings

Ingredients:

3 cups cold fat-free milk
1 pkg.  (4-serving size) JELL-O Vanilla Flavor Fat Free Sugar Free Instant Pudding
1/4 tsp. ground cinnamon

Directions:

Pour cold milk into medium bowl. Add pudding mix and cinnamon. Beat with wire whisk 2 minutes; cover.
Refrigerate until ready to serve. Store leftover sauce in refrigerator.

Weight Watchers Points: 1.5 (10-Tbsp.)
