A delicious side dish that gives you sweetness with a poultry kick!
Ingredients
- 2 cups of shredded store bought rotisserie chicken
- 1 bag of Marketside Butternut Squash Steamed (4 cups)
- 2 tablespoons extra-virgin olive oil, divided
- 1 tablespoon of all-purpose seasoning
- 1 teaspoon salt
- 1/4 teaspoon freshly ground pepper, divided
- 2 cloves of garlic, minced
- 2 tablespoons Italian parsley seasoning
2. After steaming, toss squash with olive oil, garlic, and all seasonings in a bowl.
3. Add 1 tablespoon of olive oil to pan and place on medium heat. Add chicken and stir until slightly browned.
4. Add the butternut squash mix to the chicken and stir until even.
5. Taste and serve.
Tip: For an even better taste, add corn!
